Assembling the Tiramisu Cupcakes
So I have my sponges, coffee syrup (a reduction of tia maria, strong coffee and sugar) and heavenly mascarpone cream frosting (whipped cream, mascarpone, icing sugar and MORE tia maria!! sending the family tipsy).

Next step: hollow out a piece of cake from each and soak it in syrup, pour 1 extra teaspoon into the hole. Fill the hole halfway with frosting and stopper it with the cake like so….

Just a warning.. that frosting is dayyuum good so make sure you don’t make these on an empty stomach or it won’t be so empty by the time you’ve finished!! All that was left to do was frost the tops and dust with a little cocoa powder…
Mmmmmmm…… so when you crack them open you get a lovely sticky sensation and they look pretty fab (plus it’s a sneaky way of cramming as much frosting as possible into your cupcake)..

Conclusion: a splendid first recipe :) I definitely recommend these (but only if you’re a coffee fan) and for ease rating i’d say 4/5. Make sure to keep them in the fridge.

Tiramisu Cupcakes
First leg of the journey, and the first recipe of the book: Tiramisu Cupcakes.
After braving the rain to go to tesco for my mascarpone, I have completed the sponge bit which is basically that kind of dry vs. wet ingredients mix method. They are in the oven, the kitchen is a mess and i’m just starting to get that lovely sugary aroma filling my house. So all in all a success! Next up, coffee soaking syrup for the sponge.

Lets have a catch up.
Okay so i know ive been inactive for donkeys years and everyone has no doubt forgotten about me (if anyone even cared in the first place) but i’ve finished school now so i FINALLY have enough time to pursue and document my new project.
I hold my hands up and freely admit this ‘101 things’ list i started making is a pitiful excuse for a list of that sort because frankly, my creativity dried up around no. 20. So rather than completing said list i’ve decided to start on the existing activities on it.
Number 1?? Something i have been desperate to attempt for a while now but ran into a few problems ie. cost, potential wastage of perfectly good food and most of all finding the time. However, i’ve decided to hang the consequences and see how i go..
Ergo, I have presented myself with the challenge of baking my way through the Hummingbird Bakery’s ‘CAKE DAYS’ inside these 100 or so days i have off before starting sixth form in September……IN ADDITION, I am prepared to send anyone living in the UK freshly baked cakes and goodies on request if you take a fancy to any of my pictures on the blog (hence solving my mum’s reservations that my dad won’t be able to demolish a whole batch of cookies before they pass their best- i think she underestimates him!) Wish me luck! ET. x.
